A sous vide water bath is to maintain a precise low temperature during the entire duration of the cooking cycle, which could be minutes or days. There are numerous factors that go into determining how well the Joule performs this function. I will cover those in this section and highlight some of the similarities and differences between the Joule and other immersion circulators. The specifications say that the maximum bath volume is 10+ gallons (40+ L). But on another page they get more specific which I think gives a truer picture of the capability of the Joule. It states:"In a well-insulated, covered container - a cooler, say - your little Joule can heat up to 10 gallons (40 liters) of water. In a covered pot, it can heat about 5 gallons (20 liters).
